Brown Butter Bourbon Chocolate Chip Blondies

I just love the idea of booze and dessert coming together...and I'm definitely no stranger to adding a splash of alcohol to a recipe. I'm actually a big fan of it!
I was planning on sticking to the original recipe and just melting the butter, but then I remembered how much better browned butter is! The first time I tried it was with these  Chai Spiced Coconut Blondies. Amaaazzzzzing!  

The brown butter gives the blondies a super rich and nutty flavor. Throw in some bourbon and chocolate and you have a winner!
If you're not a fan of the booze you can always leave it out, along with the extra tablespoon of flour. But seriously, why would you want to do that?!?

Brown Butter Bourbon Chocolate Chip Blondies
Recipe adapted from Smitten Kitchen
Ingredients:
1 stick butter
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup all-purpose flour, plus 1 tablespoon
1/4 cup bourbon
1/2 cup semi-sweet chocolate chips

Directions:
  • Preheat oven to 350 degrees. Line a 8 x 8 inch baking pan with foil and lightly spray with cooking spray. 
  • In a small saucepan over medium heat, melt butter. Cook butter, stirring frequently (swirling the pot also works well), until a deep golden color develops. There will be little bits and pieces in the butter that will turn brown, but make sure they don’t burn. The butter should take on a nutty sort of flavor, and this should take around 7-8 minutes. Immediately pour brown butter into a heat-proof mixing bowl, scraping all the bits into the bowl.
  • Whisk together the flour and salt in a medium bowl. Set aside.
  • Beat butter and brown sugar in a large mixing bowl until smooth. Add the egg, vanilla, and bourbon, mixing until combined. Stir in the flour mixture, followed by the chocolate chips.
  • Spread the batter into the prepared pan. Bake for 20-25 minutes, until the top is golden brown. Remove the pan and allow to cool on a wire rack. Once cool, cut into bars and serve.

Snickers Blondies

I made these a while back for my friend Ryan. He was attending a house warming party and needed something delicious to bring...and so here it is! I must say, they turned out pretty tasty!

Snickers Blondies (Recipe adapted from Cookies and Cups)
Ingredients:
3 cups pretzel twists
1 cup butter, room temperature
1 1/2 cups dark brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp coarse sea salt
3 cups coarsely chopped Snickers bars or unchopped Snickers Minis

Directions:
  • Preheat oven to 350 degrees F. Spray a 9x13 pan with cooking spray.  
  • Line bottom of pan with pretzels.
  • In your mixer cream butter and sugar together for 1 minute. Add in eggs and vanilla and continue mixing for another minute, until smooth.
  • Turn mixer to low, add in baking soda, salt and flour. Stir until just combined.
  • Dump in Snickers and turning mixer up to medium mix for 20 seconds until evenly incorporated and slightly broken up.
  • Spread batter evenly over pretzels.
  • Bake for 30-35 minutes until the center is almost set.
  • Let cool completely or overnight.
  • Cut into squares when ready to serve.

M&M Blondies

You'll never guess where I found this recipe...Pinterest! :)
Since Valentine's Day is right around the corner I just couldn't resist making them! 
I have a great toffee blondie recipe I made during the holidays, but I found this recipe at Baked to Perfection.
I love the flakiness of the top of the blondies and the richness and chewiness of the inside of the blondie. It’s a perfect marriage of sweetness and chewiness…brown sugar, butter and chocolate…amazing!
M&M Blondies
Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter
1 cup packed brown sugar
1 egg
1 tablespoon vanilla extract
1 cup to 1 1/3 cup M&M's
Directions:
Preheat oven to 350 degrees.
Mix together flour, baking powder, baking soda, and salt and set aside. Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. Cool slightly. Add egg (beaten) and vanilla and blend well. Add flour mixture, a little at a time, mixing well. Mix in 2/3 cup M&M's. Spread in 9 x 9 x 2 inch pan. Sprinkle 1/3 to 2/3 cup M&M's on top. Bake for 20 to 25 minutes. Store in airtight container at room temperature.

Toffee Blondies

I've been trying to figure out what I should make next. I have some ideas for my next dessert creations, but haven't made them yet. I want them to combine sweet and savory flavors, with an autumn theme. Every magazine I have read lately is about apples, pumpkins, and cinnamon. I haven't baked in a while and I wanted to make something with ingredients I already had on hand. 
I had some left over toffee and chocolate chips so I figured this would be a great excuse to get rid of them. I love these blondies because they are so gooey on the inside! And honestly, anything with toffee, chocolate, and pecans has to be delicious! :)
What I loved even more about this recipe is the cute idea of giving the ingredients as gifts! I've seen a lot of different sites using this idea, but this one is my favorite! You can print the recipe cards at Baked Bree.

Toffee Blondies 
Ingredients:
1/4 cup melted butter
2 lightly beaten eggs
1 teaspoon vanilla
1 cup brown sugar
1/2 cup mini chocolate chips
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped pecans or walnuts
1/2 cup Heath Chips

Directions
Preheat oven to 350 degrees. Whisk the melted butter, eggs, and vanilla in a bowl. Slowly add in the flour, brown sugar, chocolate chips, baking powder, salt, pecans, and Heath chips. Mix until all ingredients are incorporated. Spread mixture into a greased 8x8 baking pan. Bake for 25-30 minutes until the edges start to pull away from the pan. Cool and cut into 16 bars.
