Snickers Cheesecake Bars

If you've read any of my recent recipes, you obviously know I have a problem. I am obsessed with cheesecake. So here we go...next on the list is Snickers Cheesecake Bars.
These bars are super creamy with the perfect Oreo crust. The bits and pieces of Snickers throughout add just the right amount of sweetness.
I could probably eat cheesecake every day. But, since my metabolism doesn't agree with me, I had to figure out a way to not feel so guilty eating them. I cut the fat by using fat free cream cheese and Greek yogurt. You can't even taste a difference!
This cheesecake recipe is deliciously indulgent and perfect for anyone that loves an ooey gooey Snickers bar. It was a huge hit with with our friends and I hope you enjoy it as much as we did! :)

Snickers Cheesecake Bars
Ingredients:
FOR THE CRUST
1/2 cups chocolate cookie crumbs (I used Oreos)
4 tablespoons melted butter
FOR THE FILLING
12 ounces (1 1/2 packages) plain cream cheese, softened (I used reduced fat)
1 large egg
1/4 cup granulated sugar
1 tsp vanilla extract
1/3 cup fat free Greek yogurt
16 Snickers Minis, chopped into bite-sized pieces
FOR THE GLAZE
3/4 cup semisweet chocolate chips
3 tablespoons unsalted butter

Directions:
Preheat oven to 350 degrees. Line an 8x8 inch pan with foil.

For the Crust:
Stir the cookie crumbs and butter together in a bowl. Press into the lined pan. Bake for 7-10 minutes and then cool while you make the filling.

For the Filling:
Beat cream cheese, egg, sugar, and Greek yogurt, and vanilla together with a hand or stand mixer until smooth and creamy. Stir in your candy pieces and spread the mixture over your cooled crust. Bake for 30-35 minutes, or until the cheesecake has set up. Let cool completely.

For the Chocolate Glaze:
Melt the chocolate and butter together over a double boiler, or carefully in the microwave for 20 second intervals. Stir until smooth. Spread the glaze over the bars using a silicone spatula or offset frosting spatula. Chill for at least 3 hours before cutting into bars.

Cookies and Cream Candy Bark

 This is amazing. Enough said.
I found this recipe on Pinterest (surprise, surprise!) and couldn't wait to make it! I'm planning on giving these away as Christmas gifts, that is if Evan and I don't eat them all first!
Cookies and Cream Candy Bark
Recipe adapted from Your Homebased Mom
Ingredients:
2 cups vanilla melts
2 cups semi sweet melts
14 Oreos, crushed.  Reserve 1/4 cup for sprinkling on top

Directions:
Place vanilla and semi sweet chocolate into separate containers and melt in microwave.  Reserve 1/4 cup of cookie crumbs and divide the remaining crumbs between the two melted mixtures and mix in.
Drop spoonfuls of the two mixtures onto a wax paper covered cooking sheet.  Alternate the two flavors.  Use a knife to swirl the two chocolates together to create a marbled effect.
Allow to harden at room temperature or in the refrigerator.  Break into pieces and place in a pretty container.

Oreo Brownies

In my opinion, Oreos are one of the best cookies out there. I mean, you can never get tired of them! They are the perfect little sweet snack and you can do a million things with them. These Oreo brownies are simply amazing. I made these for my Yearbook kids because we met our first deadline and they were a HUGE hit. The combination of brownies, cream cheese, whip cream, and OREOS...you just can't go wrong!

Oreo Brownies
Recipe adapted from Cookies and Cups
Ingredients:
1 box brownie mix – with ingredients to prepare them according to the package directions
1 (16.6 oz) package Oreo cookies divided equally in 1/3, all coarsely chopped
1 (8 oz) tub of Cool Whip thawed in fridge
1 8 oz block of cream cheese softened
1/2-1 cup powdered sugar

Directions:
Prepare brownie batter according to package directions, folding in 1/3 of the chopped Oreos.
Bake according to package directions, until a toothpick inserted 1 inch from the edge comes out clean. Let brownies cool completely.

Meanwhile in your mixer bowl beat the cream cheese and powdered sugar until combined and smooth.

With a spatula fold in the Cool Whip and another 1/3 of the coarsely chopped Oreos.
Spread the cream cheese mixture on top of cooled brownies. Top with the last 1/3 of the Oreos.

Refrigerate for at least 30 minutes or until ready to serve. Cut into squares.
